Thomas Moshakis is a Professor in the Laboratory of Dairy Science & Technology, Department of Food Science and Technology, School of Agriculture, Aristotle University of Thessaloniki. He earned his Bachelor’s degree from the Agricultural University of Athens (1998), followed by an M.Sc. (2002) and Ph.D. (2006) from the School of Food Science and Nutrition at the University of Leeds, England. He completed a postdoctoral position at Aristotle University of Thessaloniki (2008–2009) and served as a Visiting Professor at Technische Universität Berlin, Institut Lebensmitteltechnologie und Lebensmittelchemie, Department of Food Colloids (2021–2023).

His research focuses on:

  • Designing and developing dairy products with enhanced nutritional properties and alternative (vegan) products.
  • Microencapsulation of bioactive ingredients in food products.
  • Investigating factors that affect shelf stability, texture, rheological properties, and the microstructure of food systems.

Dr. Moshakis has co-authored over 75 research papers in peer-reviewed international journals, with more than 4,500 citations and an h-index of 40 (Google Scholar). He has delivered over 120 presentations at national and international conferences. He is consistently ranked among the top 2% of researchers globally, as recognized by Elsevier (Scopus) and Stanford University’s bibliometric studies in their “Updated Science-Wide Author Databases of Standardized Citation Indicators” (single-year and career-long impact lists, Fields Food science, Chemical Physics).

He is the holder of three patents, filed with the Hellenic Industrial Property Organization and the World Intellectual Property Organization. Dr. Moshakis has served as the scientific manager for over 40 research and development projects, primarily funded by the food industry. Products developed under his supervision have received awards in national and international competitions.
