Dr. Stylianos Exarhopoulos. He is Assistant Professor (2023) at the Department of Hygiene and Technology of Food of Animal Origin – School of Veterinary Medicine in the Aristotle University of Thessaloniki.
He graduated from the Department of Food Technology of the Alexander Technological Educational Institute of Thessaloniki. He obtained a postgraduate degree specializing in Food Chemistry & Technology from the Department of Chemistry of the University of Ioannina and obtained his doctorate from the Department of Chemistry of the University of Ioannina. He has also received 2 scholarships a) from State Scholarships Foundation (IKY) & b) from Hellenic Foundation for Research and Innovation (HFRI) for postdoctoral research. He has participated in 19 research projects. His research interests focus on the a) isolation and characterization of hydrocolloids & the production of microbial exopolysaccharides on a pilot scale, b) chromatographic analysis of fats and oils, c) technology of food of animal origin and rheology of dairy products, d) new product development e) morphology and structure of food, f) thermal analysis of polymers and food packaging development. He has 39 publications in international peer-reviewed journals [total citations (Scopus: 1304, Google Scholar: 1576)]; h-index (Scopus: 18, Google Scholar: 20). He is a Reviewer in 20 international scientific journals and Topic Editor in 1 international scientific journal.
