Costas Biliaderis is an Emeritus Professor at Aristotle University, Thessaloniki, Faculty of Agriculture. He obtained his bachelor’s degree from the College of Agriculture of Aristotle University of Thessloniki (1975), and his M.Sc. (1978) and Ph.D. (1980) degrees from the University of Saskatchewan, Canada. Following a number of appointments (research associate with the National Research Council of Canada, 1980-81, project chemist at General Foods, Inc., Toronto, 1984-85, and Associate Professor with the University of Manitoba, Canada, 1985-1993), he accepted a faculty position at the Dept. of Food Science and Technology of Aristotle University (1993-2019), where he also served as department chairman for several years. He has acted as a visiting/invited or adjunct professor in several educational/research institutions: University of Guelph (Canada, 1985-87), Mediterranean Agronomic Institute of Chania – CIHEAM (1994-2026), Cyprus University of Technology (2010), Harokopio University of Athens (2007-15), Jinan University (China, 2019), University of Valladolid (Spain, 2017-2025), University of British Columbia (Canada, 2024 – ), National and Kapodistrian University of Athens, Greece (2023-26). He has been a member of the Scientific Committee of the Hellenic Food Authority (EFET, 2001-04), a member of the Research Advisory Board of the National Agricultural Research Foundation (N.AG.RE.F., 1998-2004), an elected member of the Hellenic Foundation for Research and Innovation (HFRI, 2017-21) as well as an elected member of the Hellenic Agricultural Academy, division of Food Sciences, Athens (2007 ). He is currently a member of the scientific advisory board of the Dept. of Food Science and Technology, Univ. of Western Attica, Greece, 2022-2026, an Adjunct Professor with the University of British Columbia (2025-2028) and an affiliated academic member of ProCerealTech – BioEcoUVa, Univ. of Valladolid, Valladolid, Spain (https://procerealtech-bioeco.uva.es/en/).
Prof. Biliaderis is the author and co-author of more than 280 refereed articles in international journals and 20 book chapters in the broad area of chemistry – physical chemistry of food systems, and co-edited a book entitled “Functional Food Carbohydrates” (CRC Press, 2007). His research interests include the chemistry and physical chemistry of food biopolymers, thermal analysis and food rheology, processing – storage effects on stability of food products and their constituents, structured encapsulation-delivery systems of bioactive compounds, valorization of agricultural crop residues / recovery of plant bioactives as well as functional foods and nutraceuticals. He has supervised nine and co-supervised two doctoral theses, as well as more than 35 M.Sc. theses (all research-type), and 11 post-doctoral fellows, whereas he served as an invited external examiner of 24 doctoral theses in foreign Universities. Dr. Biliaderis has more than 350 presentations in International Conferences and Workshops, including 70 invited talks-lectures (foreign and domestic universities, institutions and international meetings), and participated as faculty in several short courses organized internationally. He has been the recipient of more than 40 research grants funded by national or international agencies as well as by food industries.
